Lamington Protein Balls

Need a tasty treat to help with those 3 pm cravings? These Lamington balls are both tasty and won’t ruin your diet. they’re quick and easy and great for a snack on the go or a lunch box snack!

LamingtonĀ Protein Balls

2 C almonds

6 medjool dates or 3/4 C dried dates (soaked in boiling water for 10 min and drained)

3/4 C Scitec Nutrition 100% WPP choc coconut protein powderproteinballs

1/2 C coconut

2 T cocoa or cacao

water to bind (approximately 1-3 T)

optional extra coconut for coating

makes approximately 15 balls

  1. Place all ingredients in a blender and blend until the mixture begins to combine.
  2. Slowly add water to the mixture until a dough is formed.
  3. Roll the mixture into balls and roll in additional coconut to coat if desired.
