Lamington Protein Balls
2 C almonds
6 medjool dates or 3/4 C dried dates (soaked in boiling water for 10 min and drained)
3/4 C Scitec Nutrition 100% WPP choc coconut protein powder
1/2 C coconut
2 T cocoa or cacao
water to bind (approximately 1-3 T)
optional extra coconut for coating
makes approximately 15 balls
- Place all ingredients in a blender and blend until the mixture begins to combine.
- Slowly add water to the mixture until a dough is formed.
- Roll the mixture into balls and roll in additional coconut to coat if desired.
